Who doesn’t know them: frikandellen, the number one snack in the Netherlands. When Gijs throws a party, snacks are non-negotiable. But sometimes he also wants to serve something a little special. You already saw that MOINK balls are a fantastic option. To expand his snack arsenal, Gijs went looking for new inspiration and came across Frikandel Burnt Ends. A great barbecue twist on a real classic.

Ingredients:

  • 20 frozen frikandellen (1 box)
  • Mayonnaise
  • Butter
  • White caster sugar
Rub:
  • 2 tsp coarse salt
  • 2 tsp paprika powder
  • 2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp curry powder
BBQ sauce:
  • 230 ml ketchup
  • 3 tbsp red wine vinegar
  • 1 tbsp Worcestershire sauce
  • 100 ml maple syrup
  • 50 ml whiskey
  • 1 tbsp rub

Preparation:

Frikandel Burnt Ends are a very simple recipe. To start, mix all ingredients for the BBQ rub. Because frikandellen are fairly dry meat, the rub does not stick easily on its own. To help it along, Gijs coats the frikandellen with a very thin layer of mayonnaise, just enough to make them slightly greasy. Then he sprinkles the rub over them, making sure it is evenly distributed all around each frikandel. Make sure to keep 1 tablespoon of rub aside for the BBQ sauce.

Once the frikandellen are coated, Gijs heats them indirectly at 150°C. This lets them thaw while the rub starts to caramelize nicely.

With the frikandellen on the grill, Gijs has time to make his BBQ sauce. He combines all sauce ingredients in a pan and slowly brings them to a boil. Once the sauce has the right consistency, the frikandellen are thawed, and the rub is nicely caramelized, Gijs takes them off the barbecue. He cuts them into pieces of about 3 cm and places them in aluminum trays. Then he adds the BBQ sauce and a bit of white caster sugar, and mixes everything well.

Finally, he adds a knob of butter on top and places them back on the barbecue. Now the frikandellen finish cooking until the sauce turns nicely sticky, and the end result is absolutely fantastic. Frikandel Burnt Ends: a super simple snack that makes any party feel special.
